Cooking Steps

  • In a large skillet, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned and crispy, about 5-7 minutes.
  • Add the diced onion and cook for an additional 3-4 minutes, until the onion becomes translucent. Stir in the minced garlic and cook until fragrant, about 1 minute.
  • Toss in the fresh green beans, stirring them through the sausage mix.
  • Add the chicken broth and sprinkle in the Cajun seasoning, salt, and pepper. Bring the mixture to a gentle boil.
  • Reduce the heat and cover the pan slightly ajar, letting it simmer for about 15 minutes or until the green beans are tender yet bright in color.
  • Once the beans reach the desired tenderness, give it a taste. Adjust seasoning if necessary, and serve warm.

Notes

Substitute turkey or chicken sausage and use low-sodium chicken broth for healthier options. Consider adding seasonal veggies like bell peppers or zucchini.
