Ingredients

Main Ingredients

  • 8 oz Pasta (Penne or Fettuccine) Perfect sauce-hugging bites.
  • 2 Chicken Breast Boneless and skinless, cut into bite-sized pieces.
  • 2 tbsp Cajun Seasoning Store-bought or homemade; key for heat and flavor.
  • 1 Red Bell Pepper Sliced; adds crunch and vibrant color.
  • 1 Green Bell Pepper Sliced; adds crunch and vibrant color.
  • 3 cloves Garlic Minced; elevates the dish's depth.
  • 1 cup Cream Heavy cream for richness; Greek yogurt is a healthier swap.
  • 1 cup Chicken Broth Use low-sodium for better flavor control.
  • 1 Onion Diced; for sweetness and aroma.
  • 2 tbsp Olive Oil For searing the chicken and vegetables.
  • Fresh Parsley For garnish, optional.

Instructions

Cooking

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium-high heat. Season chicken pieces with Cajun seasoning and sauté until golden brown and cooked through (about 5-7 minutes).
  • Add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant, then toss in the sliced bell peppers and cook until tender (about 3-4 minutes).
  • Pour in the chicken broth and cream, stirring to combine. Allow the sauce to simmer for 5 minutes, thickening slightly.
  • Add the cooked pasta to the skillet, tossing it with the sauce and chicken. Cook for another 2 minutes to meld the flavors together.
  • Remove from heat, garnish with fresh parsley, and serve warm.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat on the stove with a splash of broth or cream.
