Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until soft, about 5 minutes. Add in the minced garlic and stir until fragrant.
  • Increase heat to medium-high and add the ground beef. Season with salt, pepper, and Italian seasoning if desired. Cook until browned.
  • Cut the cabbage into thin strips to create bite-sized pieces.
  • In a large bowl, mix the browned beef mixture with the cabbage, cooked rice, and diced tomatoes. Stir until well combined.
  • Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.
  • Sprinkle the shredded cheese on top.

Baking

  • Cover the baking dish with foil and place it in the preheated oven. Bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden brown.
  • Let it cool for a few minutes before serving. Cut into squares and serve.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can freeze the Cabbage Beef Bake before baking and bake it from frozen when ready.
