Ingredients
  

For the Marinade

  • 1.5 lbs boneless, skinless chicken breasts Feel free to use thighs for a richer flavor.
  • 1 cup Greek yogurt Swap with sour cream for a similar tanginess, or coconut yogurt for a vegan option.
  • 4 cloves garlic, minced Aromatic staple that forms the backbone of flavor.
  • 1 inch fresh ginger, grated

For the Sauce

  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 can crushed tomatoes (14 oz) If fresh tomatoes are abundant, use 2 cups diced.
  • 4 tbsp butter For an even creamier texture, use ghee.
  • 1 cup heavy cream Essential for that luscious finish; non-dairy cream can be a fine substitute.
  • Fresh cilantro, for garnish

Instructions
 

Preparation

  • In a bowl, mix the chicken with Greek yogurt, garlic, ginger, and half of the spices. Cover and let it marinate for at least 30 minutes.

Cooking

  • Heat butter in a large skillet over medium heat. Add the remaining spices and let them toast for a minute until fragrant.
  • Add the marinated chicken to the skillet. Cook for about 6-8 minutes until it’s browned on all sides.
  • Stir in the crushed tomatoes and simmer for 10 minutes until the sauce thickens.
  • Pour in the heavy cream, stir well, and let it simmer for another 10 minutes until rich and creamy.
  • Sprinkle with freshly chopped cilantro before serving.

Notes

Try adding vegetables like spinach or peas for added nutrition. Adjust spices according to your heat preference.
