  • 1 medium Red Onion Chopped; can substitute with green onions.
  • 1 cup Pickles Dill or bread-and-butter style.
  • 1 cup Cheddar Cheese or Dairy-Free Alternative Shredded for melting.
  • 1/4 cup Ketchup For drizzling.
  • 1/4 cup Mustard For drizzling.
  • 1 medium Avocado Sliced for topping. Can substitute with Greek yogurt.

Preparation

  • Cook brown rice or quinoa according to package directions for about 15 minutes.
  • In a skillet, brown the ground beef or turkey over medium heat, stirring occasionally until fully cooked, about 7-10 minutes.
  • Season the cooked meat with salt, pepper, and a splash of ketchup for added flavor.
  • In individual bowls, layer a generous scoop of cooked brown rice or quinoa as the base.
  • Top each bowl with a handful of fresh lettuce, followed by the seasoned meat, diced tomatoes, chopped red onion, pickles, and a sprinkle of cheese.
  • Drizzle with ketchup and mustard or your choice of condiments.
  • Finish by topping with a slice of creamy avocado.

Notes
