  • In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, Greek yogurt or sour cream, cheddar cheese, and green onions. Stir everything together until it’s well blended.
  • Lay one tortilla flat on your work surface. Spread a generous amount of your buffalo chicken mixture evenly over the tortilla, leaving a small border around the edges.
  • Carefully roll the tortilla tightly from one end to the other, ensuring the filling stays intact as you go. Repeat with the remaining tortillas.
  • Using a sharp knife, slice the rolled tortilla into bite-sized pinwheels, about 1–2 inches thick.
  • Arrange your pinwheels beautifully on a serving platter. Pair with extra buffalo sauce or ranch dressing for dipping if desired.

Notes
