  • 8 oz Cream Cheese Opt for reduced-fat if you’re watching calories.
  • 1 cup Sour Cream Can be swapped for Greek yogurt for a lighter twist.
  • 2 cups Cheddar Cheese Shredded sharp cheddar adds a wonderful flavor.

Vegetables

  • 1 cup Celery Diced for crunch; can be left out if not a fan.
  • 1/4 cup Green Onions For garnishing and added color.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, and sour cream. Stir until everything is well blended and creamy.
  • Gently fold in the diced celery and 1 cup of shredded cheddar cheese.
  • Spoon the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • Sprinkle the remaining cheddar cheese across the top.

Baking

  • Place your casserole in the oven and bake for 30 minutes, or until the cheese is bubbly and golden brown.
  • Once done, remove it from the oven, garnish with sliced green onions, and serve hot.

Notes

For an extra nutrient boost, add veggies like spinach or bell peppers. You can also customize the level of heat by mixing in jalapeños or cayenne pepper. Leftovers can be stored in an airtight container for up to 3 days, or frozen in portions.
