  • 8 slices bacon thin or regular; turkey bacon works as a leaner substitution
  • 1/2 cup brown sugar light or dark both work
  • 1 teaspoon smoked paprika adds warmth and depth
  • 1/2 teaspoon garlic powder for savory balance
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper adjust to taste
  • 1/4 teaspoon cayenne optional for a gentle kick
  • 1 tablespoon Dijon mustard helps the sugar stick and adds tang
  • 1 tablespoon olive oil brushed lightly to help crisping

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top for even crisping.
  • Pat the drumsticks dry with paper towels. Rub each drumstick with olive oil and a light sprinkle of salt and pepper.
  • In a small bowl, mix brown sugar, smoked paprika, garlic powder, and cayenne if using. Stir in the Dijon mustard to make a sticky paste.
  • Press the sugar mixture all over each drumstick, coating evenly.
  • Wrap one slice of bacon around each drumstick, tucking the end under the meat.
  • Arrange drumsticks on the wire rack and bake for 25 minutes.
  • Turn the oven to broil for the final 5–10 minutes, watching closely until the bacon is crisp and the sugar has deepened to a caramelized brown.
  • Let the drumsticks rest for 5 minutes before serving.

Notes

For playful party bites, try wrapping a drumstick with a sprig of rosemary. Refrigerate leftovers for up to 3 days and reheat in a 375°F oven.
