Instructions

Cooking Steps

  • Preheat a non-stick or cast-iron skillet over medium heat.
  • Cook the bacon strips in the skillet for about 5-7 minutes until crispy, turning occasionally, then drain on paper towels.
  • In a mixing bowl, whisk together the eggs with a sprinkle of salt and pepper to taste.
  • Pour the beaten eggs into the same skillet, and stir gently, cooking until just set but still soft (about 3-4 minutes).
  • Cut slider buns in half and place a layer of scrambled eggs on the bottom half, followed by a strip of bacon and a slice of cheddar cheese.
  • Top with the other half of the bun and return the sliders to the skillet, covered, for 1 minute to melt the cheese slightly.
  • Remove from heat and sprinkle with chopped fresh herbs before serving.

Notes

For a healthier option, use egg whites or a healthy egg substitute. You can also swap bacon for spinach or avocado. Seasonal additions include fresh tomatoes in the summer or sautéed mushrooms in the winter.
