  • 4 slices Bread Choose your favorite type (whole grain or sourdough).
  • 3 large Eggs Beaten, ready for scrambling.
  • 4 slices Bacon Crisped to perfection; turkey bacon can be used for a healthier twist.
  • 2 slices Cheese Cheddar, American, or your choice.
  • 1 medium Tomato Sliced.
  • Leafy Greens (e.g., spinach or lettuce) Adding color and crunch.
  • Butter or oil For frying.

  • In a skillet over medium heat, fry the bacon until crispy, about 5–7 minutes. Set aside on paper towels to absorb excess grease.
  • In the same skillet, remove excess bacon fat, leaving about 1 tablespoon. Whisk the eggs and pour into the skillet. Cook over medium-low heat, stirring gently until soft curds form. Season with salt and pepper.
  • Lightly butter each slice of bread and toast them in the skillet until golden brown, about 2 minutes on each side.
  • On a slice of toast, layer cheese, a generous helping of scrambled eggs, crispy bacon, sliced tomatoes, and leafy greens. Top with another slice of toasted bread.
  • If desired, press down gently and return the assembled sandwich to the skillet for an additional minute on each side for a melty, warm finish.
  • Slice in half to reveal the colorful layers and enjoy!

Notes

Add avocado for creaminess, use sriracha for a spicy kick, or swap bacon for veggies for a vegetarian option. Serve with hash browns or fruit salad.
