Preparation

  • Bring a large pot of salted water to a boil and cook the bow tie pasta according to package directions until al dente. Drain and rinse under cold water to stop cooking and cool the pasta.
  • While the pasta cooks, whisk together olive oil, red wine vinegar, Dijon, minced garlic, oregano, salt, and pepper in a bowl until glossy and emulsified.
  • In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red pepper, red onion, olives, and mozzarella. Toss gently to mingle the ingredients without breaking the cheese.
  • Pour the dressing over the salad and toss until every bow tie is lightly coated. Taste and adjust salt, pepper, or vinegar for brightness.
  • Fold in the fresh basil last to keep it vibrant. Chill for at least 20 minutes to let flavors meld, or serve immediately.

Notes

Add protein by tossing in grilled chicken, shrimp, or chickpeas. For a Mediterranean twist, swap mozzarella for feta and add artichoke hearts and sun-dried tomatoes. Stir in Greek yogurt or mayo for a creamier dressing. Encourage experimentation with different flavors.
