  • 2 cups plain Greek yogurt (full-fat or 2 percent) Use dairy-free yogurt to make them vegan.
  • 1 cup fresh or frozen blueberries Fresh for bursts, frozen for a more uniform texture.
  • 2 tablespoons honey or maple syrup Use agave for vegan option.
  • 1 teaspoon pure vanilla extract Adds warmth and depth.
  • 1/4 cup rolled oats or granola (optional) For chew, or substitute crushed almonds for extra crunch.
  • 1 piece zest of one lemon (optional) Lifts the fruit flavor.

Preparation

  • In a medium bowl, whisk the Greek yogurt with honey (or maple syrup) and vanilla until smooth. Taste and adjust sweetness.
  • Fold in the lemon zest and oats or granola if using. If too stiff, add a splash of milk to loosen.
  • Place a few blueberries in the bottom of each silicone mold cavity or tray compartment. Press them gently.
  • Spoon the yogurt mixture over the blueberries, filling each cavity about three quarters full. Tap the tray lightly to remove air pockets.
  • Top with an extra blueberry or a sprinkle of granola, then freeze until solid — usually 2 to 3 hours, or overnight for best results.
  • To unmold, run the bottom of the silicone tray under warm water for a few seconds, then gently pop out each bite.

Notes

Store frozen bites in an airtight container or freezer bag with parchment between layers to prevent sticking. They keep well for up to 2 months. For a softer bite, let sit at room temperature for 5 minutes or enjoy straight from the freezer.
