Preparation

  • Slice the bell peppers and onion thinly, and mince the garlic. Set them aside.

Cooking

  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the chopped onion and minced garlic, stirring for about 2-3 minutes until fragrant and translucent.
  • Toss in the sliced bell peppers, stirring for another 5 minutes until they’re tender and starting to caramelize.
  • Sprinkle in the cumin, chili powder, salt, and pepper. Stir well to coat the vegetables evenly.
  • Gently fold in the black beans, allowing them to warm through for about 2 minutes.
  • Meanwhile, lightly toast the tortillas in another skillet or warm them in the oven.

Serving

  • Spoon the mixture of veggies and beans onto the warm tortillas, customize with toppings of your choice, and enjoy!

Notes
