Black Bean Brownies

Ingredients

  • 1 15oz can black beans drained and rinsed
  • ½ cup rolled oats
  • 2 tbsp cocoa powder*
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 tsp vanilla extract
  • cup maple syrup
  • ¼ cup coconut oil melted
  • 1/2 cup vegan chocolate chips (I used semi-sweet)

Instructions

  • Preheat oven to 350°F. Grease or line a 9x9 baking dish with parchment paper.
  • Purée all of the ingredients, except for the chocolate chips, in a blender or food processor.
  • Pour the batter into a bowl and fold in the chocolate chips. Then transfer it into the prepared baking dish and bake for 20 minutes. Let cool for 15 minutes before cutting and serving.

Notes

*I used Dutch processed cocoa powder for a more rich and bold flavor. If you can't find it at your local grocery store you can buy it online here:
