  • 3 lbs Beef Chuck Roast Tender cut perfect for shredding.
  • 3 pieces Guajillo Chiles Dried chiles for depth and mild spiciness.
  • 2 pieces Ancho Chiles Adds sweetness and heat.
  • 1 medium Onion Enhances flavor.
  • 4 cloves Garlic Fresh for aroma.
  • 1 tsp Cumin Essential spice for authenticity.
  • 1 tsp Oregano Aromatic herb that complements the dish.
  • 2 pieces Bay Leaves Adds subtle complexity.
  • 4 cups Beef Broth Richness for cooking the meat.

Instructions
 

Preparation

  • Remove stems and seeds from the guajillo and ancho chiles. Toast them lightly in a dry skillet over medium heat for a couple of minutes until fragrant.
  • In a blender, combine the toasted chiles, onion, garlic, cumin, oregano, and a cup of beef broth. Blend until smooth.
  • In a large Dutch oven, heat some oil over medium heat. Sear the beef chuck roast on all sides until browned (about 5 minutes each side).

Cooking

  • Pour the blended chile sauce over the meat, and add the remaining beef broth, bay leaves, and a pinch of salt.
  • Cover and cook on low heat on the stovetop or in a preheated oven (300°F) for 3–4 hours, until the meat is fork-tender.
  • Once cooked, remove the meat, shred it with two forks, and allow it to soak in the juices for extra flavor.

Assembly

  • In a separate pan, warm soft corn tortillas, ideally using a little oil for that beautiful golden color.
  • Fill each tortilla with shredded beef, and top with minced onions, fresh cilantro, and a squeeze of lime.
  • Serve your Birria Tacos with a side of the rich consomé for dipping!

Notes

Add cheese for a cheesy twist. Adjust spice level by adding chipotle chiles. Opt for lettuce wraps for a low-carb version.
