For the special sauce

  • 1 cup Mayonnaise Base for creamy richness; use light mayo for a lighter option.
  • 3 tablespoons Ketchup Sweet tomato tang.
  • 1 tablespoon Yellow mustard A whisper of acidity.
  • 2 tablespoons Sweet pickle relish Adds texture and sweetness.
  • 1 teaspoon White wine vinegar Brightens the sauce.
  • 1/2 teaspoon Paprika Smoky warmth.

Instructions
 

Prepare the Sauce

  • In a bowl, whisk mayonnaise, ketchup, mustard, relish, vinegar, and paprika until smooth. Taste and adjust.

Form the Patties

  • Divide the beef into 12 equal portions and gently pat into thin rounds slightly larger than the buns. Season both sides with salt and pepper.

Cook the Patties

  • Heat a skillet over medium-high heat. Add patties in batches, pressing lightly so they make good contact with the pan.
  • Cook 2-3 minutes per side until browned and cooked through. Add a slice of cheese on each patty in the final minute so it melts gloriously.

Toast the Buns

  • Split and lightly butter the buns, then toast cut-side down in the pan until golden.

Assemble the Sliders

  • Spread a generous spoonful of sauce on both top and bottom buns. Stack lettuce, onion, a cheesy patty, and pickles on the bottom bun, then cap it with the top.
  • Repeat for all sliders.

Serve

  • Arrange on a platter and enjoy immediately.

Notes

For party servings, thread two sliders onto a skewer for easy serving at gatherings. For a vegetarian option, use seasoned portobello rounds or halloumi.
