  • 1 lb ground beef Choose lean beef for a healthier option.
  • 1 cup uncooked rice Long-grain or brown rice works wonderfully.
  • 1 onion, diced Adds a sweet, aromatic base to the soup.
  • 2 stalks celery, diced Crunchy and fresh.
  • 2 carrots, sliced For a touch of sweetness and color.
  • 3 cloves garlic, minced Because garlic makes everything better!
  • 6 cups beef broth For a rich and hearty base.
  • 1 can (14.5 oz) diced tomatoes Adds acidity and freshness.
  • 1 teaspoon dried oregano For an earthy herbal note.
  • Salt and pepper To season the soup.

Preparation

  • In a large pot over medium heat, cook the ground beef until browned. Drain any excess fat.
  • Add the diced onion, carrots, and celery to the pot. Sauté for about 5 minutes until they start to soften.
  • Stir in the minced garlic and dried oregano. Cook for another minute until fragrant.
  • Pour in the beef broth and add the diced tomatoes. Bring everything to a boil, stirring occasionally.
  • Once boiling, add the uncooked rice. Reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked.
  • Taste and season with salt and pepper.
  • Ladle into bowls and enjoy hot.

Notes

Store leftover soup in an airtight container in the fridge for up to 3 days. It can also be frozen for up to 3 months. When reheating, add a splash of broth as rice absorbs a lot of liquid.
