Main Ingredients

  • 3 1/4 cups all-purpose flour For a lighter crumb, replace 1/2 cup with bread flour.
  • 2 1/4 tsp active dry yeast One packet; instant yeast can be used too; reduce proofing time slightly.
  • 1 cup warm milk Approximately 105–115°F; use dairy or plant milk as a healthy option.
  • 3 tbsp sugar Feeds the yeast and adds gentle browning; honey can be swapped if preferred.
  • 2 tbsp unsalted butter, softened Adds richness; olive oil is an acceptable substitute for a dairy-free version.
  • 1 large egg For structure and shine; for egg-free, use a flax 'egg' (1 tbsp ground flax + 3 tbsp water).
  • 1 tsp salt Balances flavor.
  • Melted butter for brushing Optional but dreamy.

Instructions
 

Dough Preparation

  • In a small bowl, whisk together warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  • In a large bowl, combine 2 cups flour and salt. Add the yeast mixture, egg, and softened butter; stir until combined.
  • Gradually add remaining flour while kneading by hand or in a stand mixer for 8-10 minutes until smooth and elastic.

First Rise

  • Place the dough in an oiled bowl, cover with a warm towel, and let rise in a warm spot until doubled, approximately 60 minutes.

Bun Shaping

  • Gently punch down the dough. Divide into 8 equal pieces, shape into rounds, and place on a lined baking sheet spaced apart.
  • Cover and let rise for another 30-45 minutes until puffy.

Baking

  • Preheat the oven to 375°F (190°C). Brush the tops with beaten egg for shine or melted butter for softness.
  • Bake for 12-15 minutes until golden brown. Brush with butter again as soon as they come out of the oven for a tender crust.
  • Cool slightly on a rack before slicing.

Notes

If you want a slightly sweeter bun, increase sugar by 1 tbsp. For whole-wheat lovers, substitute up to 1 cup of whole-wheat flour.
