Preparation

  • Prepare the chicken: If using rotisserie or leftover chicken, shred into bite-size pieces. If cooking from raw, poach or roast boneless chicken breasts for 12–15 minutes until juices run clear, then shred when cool enough to handle.
  • Mix dressing: In a large bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, dill, salt, and pepper. Taste for brightness — you want a balance of creamy and tangy.
  • Add produce: Fold in diced celery, apple, and red onion, ensuring the apple provides a crisp, sweet contrast while the celery keeps it lively.
  • Combine chicken and nuts: Add the shredded chicken and chopped nuts or seeds, tossing gently to coat.
  • Chill and meld: Cover and chill for at least 20 minutes to let flavors meld. Serve chilled or at cool room temperature.

Notes

Store in an airtight container for up to 3–4 days. Flavors deepen after a day, making it perfect for make-ahead meals. Not recommended to freeze due to mayo or yogurt textures.
