  • 2 lbs beef chuck, cut into 1-2 inch cubes This is the star of our show, becoming melt-in-your-mouth tender.
  • 4 slices bacon Adds a smoky depth of flavor; substitute with turkey bacon for a healthier option.
  • 2 cups red wine A good quality Pinot Noir works beautifully.
  • 3 cups beef broth Use low-sodium for a healthier twist or homemade for an indulgent touch.
  • 1 large onion, diced Offers a sweet aromatic base.
  • 2 units carrots, sliced Substitute with parsnips for a unique flavor.
  • 2 cloves garlic, minced Adding aromatic magic.
  • 2 tablespoons flour To thicken the sauce; gluten-free alternative if needed.
  • 1 sprig fresh thyme Bringing balance and freshness to the rich flavors.
  • 1 leaf bay leaf
  • 1 sprig parsley, chopped
  • to taste salt
  • to taste pepper

Preparation

  • In a large Dutch oven, cook the bacon over medium heat until crisp. Remove and let drain on paper towels.
  • In the same pot, add the beef cubes in batches, browning them on all sides.
  • Add the diced onions, carrots, and garlic. Sauté until softened, around 5 minutes.
  • Sprinkle the flour over the sautéed mixture, stirring to combine and cook for about a minute.
  • Carefully pour in the red wine and beef broth, scraping the bottom of the pan to release all those flavorful bits.
  • Add the bacon back to the pot, along with the thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce to a simmer.
  • Cover and cook for 2 to 2.5 hours, until the beef is fork-tender.
  • Remove the bay leaf and thyme sprig. Stir in chopped parsley.

Notes

This dish can be made in advance, stores well in the refrigerator for up to 3 days, and is freezable for up to three months.
