Ingredients
  

Main Ingredients

  • 1 pound flank steak or sirloin, thinly sliced across the grain Gives tender, juicy bites.
  • 1 pound broccoli florets, washed and cut into bite-sized pieces Bright and crisp.

Sauce Ingredients

  • 3 tablespoons soy sauce (or tamari for gluten-free) The salty backbone.
  • 2 tablespoons oyster sauce Adds depth and a glossy finish; substitute hoisin for a sweeter twist.
  • 1 tablespoon rice vinegar Balances the sauce with a gentle tang.
  • 1 tablespoon brown sugar or honey Creates a caramelized note.
  • 2 teaspoons cornstarch For a silky, clingy sauce.
  • 3 cloves garlic, minced Aromatic and warming.
  • 1 tablespoon fresh ginger, grated Bright and slightly peppery.
  • 2 tablespoons vegetable oil (or avocado oil) For high-heat searing.
  • 2 tablespoons green onions, sliced on the diagonal Fresh finish.

Instructions
 

Preparation

  • In a small bowl whisk together soy sauce, oyster sauce, rice vinegar, brown sugar, and cornstarch until smooth. Set aside.
  • Toss sliced beef with a teaspoon of soy and a pinch of cornstarch. Let it sit while you prep the vegetables.
  • Bring a pot of salted water to a boil, add broccoli for 1 minute until bright green and slightly tender, then drain and plunge into ice water to stop cooking. Drain well.

Cooking

  • Heat a large skillet or wok over high heat. Add oil and when shimmering, add beef in a single layer. Sear quickly for 1–2 minutes per side until browned but still slightly pink inside. Remove and set aside.
  • Lower heat to medium-high, add a touch more oil if needed, then sauté garlic and ginger for 20–30 seconds until fragrant.
  • Add the drained broccoli to the pan, toss for a minute, then return the beef to the skillet.
  • Pour the sauce over everything and toss continuously until thickened.
  • Sprinkle green onions and sesame seeds. Serve hot over steamed rice or noodles.

Notes

For variations, swap beef for chicken or tofu. Add red pepper flakes or sriracha for heat. Use low-sodium soy and add extra vegetables to lighten the dish.
