  • 2 pounds boneless, skinless chicken breasts Substitute with thighs for a juicier option.
  • 1 cup BBQ sauce Use homemade or store-bought; use your favorite!
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt & pepper to taste
  • 12 slider buns slider buns Whole wheat buns are a great healthy option.
  • 1 cup coleslaw mix For crunch; swap with a fresh salad if preferred.

Preparation

  • In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Cook for 6-7 minutes on each side, until cooked through.
  • Once the chicken is cooked, place it on a cutting board and let it rest for a few minutes. Then, shred the chicken using two forks.
  • In the same skillet, reduce the heat to low and add the shredded chicken back into the pan. Pour in the BBQ sauce and mix well, allowing the flavors to meld together for about 5 minutes.
  • While the chicken is warming, take your slider buns and toast them lightly in the oven or on a skillet until golden.
  • Spoon a generous amount of BBQ chicken onto each slider bun and top with coleslaw for that extra crunch.

Notes

You can easily prepare the chicken in advance. Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken on a skillet over medium heat adding a splash of BBQ sauce.
