  • 1 cup Panko breadcrumbs These add a wonderful crunch. Gluten-free options can be used.
  • 1/2 cup Mayonnaise Alternative Greek yogurt for a lighter version.
  • 2 tbsp Sriracha Adjust amount based on your heat preference.
  • 2 tbsp Honey Maple syrup can be used for a vegan option.
  • 1 tbsp Lemon juice Adds freshness to the flavors.
  • 1 tsp Garlic powder Can replace with fresh minced garlic for bolder flavor.
  • Salt and pepper To taste.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Cut the salmon fillet into bite-sized pieces, typically about 1 to 1.5 inches.
  • In a shallow bowl, mix the panko breadcrumbs with a pinch of salt and pepper.
  • In another bowl, whisk together the mayonnaise, Sriracha, honey, and lemon juice to create the bang bang sauce.
  • Dip each salmon piece into the bang bang sauce, then roll them in the panko breadcrumb mixture. Place them on a baking sheet lined with parchment paper.

Cooking

  • Bake in the preheated oven for 12-15 minutes, until golden brown and cooked through.
  • Serve the remaining bang bang sauce on the side for dipping.

Notes

For extra flavor, marinate the salmon in lime juice and garlic before breading. Store leftovers in an airtight container in the fridge for up to 3 days.
