Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, whisk together the lemon juice, minced garlic, olive oil, honey, salt, pepper, and dried oregano.
  • Place the chicken thighs in a large resealable bag or dish, and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
  • Lay the marinated chicken thighs skin-side up on a baking sheet lined with parchment paper.

Cooking

  • Bake in the preheated oven for 30 minutes or until the internal temperature reaches 165°F (75°C).
  • Once baked, remove the chicken from the oven, sprinkle with freshly chopped parsley, and serve immediately.

Notes

For a healthier option, use Greek yogurt instead of honey. Try using seasonal herbs for added freshness or add red pepper flakes for a kick.
