Main Ingredients

  • 1 block block of feta cheese (about 200g) Swap with ricotta for a different but equally creamy texture!
  • 2 cups cherry tomatoes Use halved Roma tomatoes if cherries aren’t on hand.
  • 1 medium onion, diced Yellow or red varieties will work perfectly.
  • 4 cloves garlic, minced Garlic lovers can go for an extra clove or two!
  • 4 cups vegetable or chicken broth Opt for low-sodium varieties for better control over flavor.
  • 1 teaspoon dried oregano Feel free to explore with fresh herbs for a vibrant twist.
  • 1 teaspoon red pepper flakes Adjust to your spice level; skip entirely for a milder soup.
  • Salt and pepper to taste
  • 2 tablespoons olive oil Infused olive oil can add a nice aromatic touch.
  • Fresh basil or parsley for garnish A final touch to elevate this dish!

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). The anticipation of baking fills the air with excitement!
  • In a baking dish, combine the cherry tomatoes, diced onion, minced garlic, olive oil, oregano, red pepper flakes, salt, and pepper. Nestle the block of feta cheese in the center—think of it as a cozy little home for all those flavors.

Cooking

  • Place the baking dish in the oven and roast for about 25-30 minutes, or until the tomatoes burst and the feta becomes golden and creamy.
  • Once roasted, carefully transfer the contents of the baking dish to a large pot. Add the broth and use an immersion blender to mix everything until smooth and velvety.
  • On medium heat, warm the soup while stirring occasionally, letting the flavors meld and come together (about 5-7 minutes).

Serving

  • Ladle the soup into bowls, garnishing with fresh basil or parsley. Now sit back and enjoy the medley of scents and flavors.

Notes

For healthier swaps, substitute half the feta with Greek yogurt. You can also add grilled chicken or chickpeas for added protein. Incorporate seasonal veggies like spinach or zucchini for creativity.
