  • 200 grams Feta cheese For that creamy, tangy flavor.
  • 4 large Eggs Provides a hearty protein boost.
  • 250 grams Cherry tomatoes Sweet and juicy, they burst with flavor.
  • 150 grams Fresh spinach Adds a pop of color and nutrients.
  • 2 tablespoons Olive oil Enhances richness.
  • 2 cloves Garlic (minced) For aromatic punch.
  • to taste Salt and pepper Essential seasoning.
  • 1 teaspoon Crushed red pepper flakes (optional) For a little kick.

Instructions
 

Preparation

  • Preheat your oven: Set it to 400°F (200°C).
  • Prepare your veggies: In a large oven-safe skillet, add the cherry tomatoes, fresh spinach, and minced garlic. Drizzle with olive oil, season with salt and pepper, and mix gently.
  • Add the feta: Place the feta cheese in the center of the skillet, surrounded by the veggies. Drizzle with a bit more olive oil and a sprinkle of crushed red pepper flakes if desired.

Cooking

  • Bake: Put your skillet in the preheated oven and bake for 20 minutes or until the tomatoes are blistered and the feta is golden and soft.
  • Add the eggs: Carefully remove the skillet from the oven. Using a spoon, make small wells in the mixture and crack the eggs into each well. Return the skillet to the oven and bake for an additional 5-7 minutes, or until the egg whites are set but the yolks remain runny.
  • Serve and enjoy: Garnish with freshly ground black pepper, and dig in!

Notes

Can substitute feta with goat cheese or use kale/swiss chard instead of spinach. For a lighter version, reduce the feta or use spray oil.
