  • 12 oz Pasta of choice (spaghetti or penne) Choose your family's favorite type of pasta.
  • 2 cups Cherry tomatoes Fresh and sweet for roasting.
  • 8 oz Burrata cheese The hero of the dish for its rich, creamy texture.
  • 4 cloves Garlic Minced for depth of flavor.
  • 2 tbsp Olive oil Extra virgin is preferred for best flavor.
  • to taste Salt For seasoning the dish.
  • to taste Black pepper For seasoning.

Garnish

  • 1 cup Fresh basil For a fragrant finish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, combine cherry tomatoes with minced garlic, olive oil, salt, and pepper. Toss until well coated.

Cooking

  • Place the baking dish in the oven and roast for about 15 minutes, or until the tomatoes are bursting and fragrant.
  • Meanwhile, bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
  • Once the tomatoes are done, remove them from the oven and mix in the drained pasta. Place the burrata on top and drizzle a little more olive oil over the cheese.
  • Return the dish to the oven for an additional 5 minutes to allow the burrata to heat through and start melting.

Serving

  • Sprinkle with fresh basil before serving.
  • Enjoy warm with loved ones gathered around the table.

Notes

Consider adding protein like cooked chicken or shrimp for a heartier meal. Seasonal variations can include roasted butternut squash in fall or peas in spring. Fresh herbs should be added just before serving for the best flavor.
