  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 12-15 slices thin-cut bacon (or turkey bacon) Use thin-cut for easier wrapping.
  • 1/4 cup brown sugar Substitute maple syrup for a gluten-free option.
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper Fresh-ground if possible.
  • 1/2 teaspoon salt Adjust to taste.
  • 2 tablespoons olive oil Use avocado oil for higher-heat cooking.
  • 1 tablespoon Dijon mustard Optional, for added tang.

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with foil and a wire rack.
  • In a bowl, toss the chicken cubes with olive oil, smoked paprika, garlic powder, salt, and pepper.
  • Cut bacon slices in half crosswise and wrap each seasoned chicken cube with a half-slice of bacon, securing with a toothpick.
  • Arrange the bacon-wrapped chicken bites on the wire rack, seam-side down.
  • In a small bowl, mix brown sugar and Dijon mustard (if using) and brush onto the tops of each wrapped bite.

Cooking

  • Bake for 20-25 minutes, until the bacon is crisp and the chicken reaches 165°F (74°C). You can broil for an additional 1-2 minutes if you want extra crispness.
  • Let rest for 3-5 minutes before serving.

Notes

Assemble the bites ahead of time and store in the fridge for up to 24 hours before baking. Leftovers can be refrigerated for up to 3 days or frozen for 2 months.
