Preparation

  • Preheat the oven to 400°F (200°C).
  • Pat the chicken breasts dry with a paper towel, then season generously with salt, pepper, and your chosen herbs.
  • If using cheese, place a slice on each chicken breast, then roll it up tightly.
  • Take a slice of bacon and wrap it around each chicken breast, securing with toothpicks if needed.
  • Arrange the bacon-wrapped chicken on a lightly greased baking sheet, ensuring they have space to cook evenly.
  • Drizzle a light layer of olive oil over the chicken.

Cooking

  • Bake in the preheated oven for 25-30 minutes or until the bacon is crispy and the internal temperature of the chicken reaches 165°F (75°C).
  • Let the chicken rest for about 5 minutes before slicing to allow the juices to redistribute.

Notes

For variations, consider adding garlic powder, stuffing the chicken with spinach and feta, or brushing with BBQ sauce towards the end of baking. Serve with roasted vegetables or creamy mashed potatoes.
