  • 2 pieces ripe avocados, diced Choose perfectly ripe avocados for best flavor.
  • 1 large ripe mango, peeled and diced Ensure it's ripe for sweetness.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped Can substitute with mint.

Dressing

  • 2 pieces limes, juiced
  • 2 tablespoons olive oil
  • to taste salt and pepper

Preparation

  • Gather all your ingredients. Rinse the cherry tomatoes and chop the cilantro.
  • Dice the avocados and mango into bite-sized pieces.

Mixing

  • In a large mixing bowl, combine the diced avocado, mango, cherry tomatoes, red onion, and cilantro. Gently toss to combine.
  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the salad and toss gently again.

Serving

  • Allow the salad to rest for a few minutes for flavors to meld.
  • Taste and adjust lime juice or seasoning as needed.
  • Garnish with additional cilantro if desired, and serve chilled or at room temperature.

Notes

This salad is very adaptable. Consider adding diced jalapeƱos for heat, crumbled cheese for creaminess, or chopped nuts for crunch.
