Ingredients

  • 2 sheets Puff Pastry Store-bought or homemade.
  • 1 Egg (for egg wash) Gives a golden color; use plant-based milk for vegan version.

For the filling

  • 3 medium Apples, peeled and diced Granny Smith recommended.
  • cup Sugar Adjust to taste; brown sugar adds depth.
  • 1 tsp Ground Cinnamon Add nutmeg for extra spice.
  • 1 tbsp Lemon Juice Brightens flavors and prevents browning.
  • 1 tsp Vanilla Extract Enhances the apple flavor.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, combine the diced apples, sugar, cinnamon, lemon juice, and vanilla extract. Toss gently and let sit for 5-10 minutes.
  • Lightly flour your work surface and roll out each sheet of puff pastry to about ⅛ inch thick.
  • Slice the pastry into 4x4 inch squares.

Assembly

  • Spoon about 1-2 tablespoons of the apple mixture onto one half of each pastry square.
  • Fold the pastry over to create a triangle and crimp the edges with a fork.
  • Beat the egg and brush over each turnover.

Baking

  • Place the turnovers on a lined baking sheet and bake for 15-20 minutes, or until golden brown.
  • Let cool for a few minutes before serving.

Notes

For variations, substitute apples with pears or berries. Use honey instead of sugar for a healthier option.
