  • 12 ounces rotini or penne pasta Use for best texture.
  • 1 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1 tablespoon vinegar For the dressing.
  • 1 cup chopped bell peppers Can use a mix of colors.
  • 1/2 cup chopped red onions
  • 1 cup chopped celery
  • 1 cup shredded cheddar or mozzarella cheese For a melty texture.
  • 1/2 cup bacon bits Substitute with crispy chickpeas for a vegetarian option.

Seasonings

  • 1 teaspoon garlic powder

Preparation

  • Boil water in a large pot, adding a pinch of salt. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  • In a medium bowl, blend together the mayonnaise, Greek yogurt, and vinegar until smooth. Season with garlic powder, salt, and pepper.
  • While the pasta is cooking, chop the bell peppers, red onions, and celery.

Combining Ingredients

  • In a large mixing bowl, combine the cooled pasta, chopped veggies, cheese, and bacon bits.
  • Pour the creamy dressing over the top and mix until everything is nicely coated.
  • Taste and adjust seasonings if necessary.
  • Let it chill in the fridge for at least 30 minutes before serving.

Notes

Add grilled chicken or diced ham for a protein boost. Fresh herbs like basil or parsley add a nice touch. For a Mediterranean spin, consider adding cherry tomatoes or olives.
