  • 1 tablespoon Olive Oil Used to help sear the chicken.
  • 1 tablespoon Fresh Parsley Substitute with dried herbs if fresh isn't available.

  • 1 tablespoon Lemon Juice Fresh lemon juice elevates the dish beautifully.

Preparation

  • Pat the chicken thighs dry with paper towels, ensuring they get that lovely golden brown crust. Season generously with salt and pepper.

Cooking

  • In a large skillet over medium-high heat, add olive oil and half the butter. Let it melt and become bubbly.
  • Carefully place the chicken thighs in the skillet, skin side down. Cook for about 5-7 minutes until the skin is crispy and golden.
  • Flip the chicken thighs gently and add the minced garlic to the skillet. Let it cook for about 1-2 minutes until aromatic.
  • Pour in the remaining butter and squeeze fresh lemon juice over the chicken, letting it all mingle together in the pan. Spoon the melted garlic butter over the chicken every few minutes.
  • Cook for another 10-12 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Remove from heat and sprinkle with fresh parsley.
  • Transfer to a serving platter and drizzle any remaining garlic butter sauce from the skillet on top.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. To reheat, warm on the stove over low heat, adding a little water or an extra pat of butter to maintain moisture. This dish also freezes well, store in a freezer-safe bag for up to three months.
