Roasted Asparagus

Tasty, simple, and easy to make roasted asparagus. A delicious veggie side dish!

How to Roast Asparagus

Trim – make sure to cut off the tough ends of the asparagus.

Coat – evenly coat the asparagus with the olive oil when tossing.

Spread out evenly – after tossing, spread the asparagus out on the pan so that they’ll all get evenly cooked and roasted.

High temperature – the very hot oven temperature is key. It’s what gives the asparagus that perfect texture, tender but still crispy.

Key Ingredient

Lemon juice and zest – adds and enhances flavor.

This recipe for asparagus requires few ingredients but it still comes out super tasty.

Roasted Asparagus

Ingredients

  • 1 bunches of asparagus trimmed
  • 2 tbsp olive oil
  • ½ tsp salt
  • zest of one lemon
  • ¼ tsp freshly ground black pepper
  • 1 tbsp freshly squeezed lemon juice
  • vegan parmesan (optional) for garnish

Instructions

  • Preheat oven to 425°F. Line a baking sheet with aluminum foil.
  • Place the asparagus on the foil. Drizzle on the olive oil and sprinkle the salt and pepper. Toss to coat and evenly spread them out on the pan.
  • Bake for 15 minutes.
  • Once out of the oven, add the lemon juice and toss around with tongs. Place in a serving dish and garnish with vegan permesan. Serve immediately.
