Ingredients
- 2 medium russet potatoes peeled and shredded
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- 2 tsp olive oil divided
Instructions
- In a large bowl mix together the shredded potatoes, salt, and pepper.
- Heat 1 tsp of olive oil in large skillet over medium heat. Scoop half of the shredded potatoes onto the pan and spread out into a circle. Cook until golden brown, about 3-4 minutes. Flip and cook the other side for an additional 2-3 minutes. Slide onto a plate and cook the rest of the shredded potatoes following the same steps. Serve immediately.
