Yep, vegan and gluten free brownies made with black beans!

Key Ingredients
Black beans – add a nice smooth texture and rich flavor. You wouldn’t even be able to tell that these brownies were made with them.
Rolled oats – a healthier alternative to flour. Also makes the brownies gluten free.
Cocoa powder – is what makes brownies what they are! I used Dutch processed cocoa powder for rich and more bold flavor.
Vanilla extract – enhances the chocolate flavor.
You can also add pecans, walnuts, pistachios, etc. for added protein and yumminess.

Make these and try them out for yourself! Bet you won’t be able to eat just one 🙂
Black Bean Brownies
Servings: 9 brownies
Ingredients
- 1 15oz can black beans drained and rinsed
- ½ cup rolled oats
- 2 tbsp cocoa powder*
- ½ tsp baking powder
- ¼ tsp salt
- 2 tsp vanilla extract
- ⅓ cup maple syrup
- ¼ cup coconut oil melted
- 1/2 cup vegan chocolate chips (I used semi-sweet)
Instructions
- Preheat oven to 350°F. Grease or line a 9×9 baking dish with parchment paper.
- Purée all of the ingredients, except for the chocolate chips, in a blender or food processor.
- Pour the batter into a bowl and fold in the chocolate chips. Then transfer it into the prepared baking dish and bake for 20 minutes. Let cool for 15 minutes before cutting and serving.
Notes
*I used Dutch processed cocoa powder for a more rich and bold flavor. If you can’t find it at your local grocery store you can buy it online here:
