How to Roast Asparagus
Trim – make sure to cut off the tough ends of the asparagus.
Coat – evenly coat the asparagus with the olive oil when tossing.
Spread out evenly – after tossing, spread the asparagus out on the pan so that they’ll all get evenly cooked and roasted.
High temperature – the very hot oven temperature is key. It’s what gives the asparagus that perfect texture, tender but still crispy.

Lemon juice and zest – adds and enhances flavor.

Roasted Asparagus
Servings: 3 to 4
Ingredients
- 1 bunches of asparagus trimmed
- 2 tbsp olive oil
- ½ tsp salt
- zest of one lemon
- ¼ tsp freshly ground black pepper
- 1 tbsp freshly squeezed lemon juice
- vegan parmesan (optional) for garnish
Instructions
- Preheat oven to 425°F. Line a baking sheet with aluminum foil.
- Place the asparagus on the foil. Drizzle on the olive oil and sprinkle the salt and pepper. Toss to coat and evenly spread them out on the pan.
- Bake for 15 minutes.
- Once out of the oven, add the lemon juice and toss around with tongs. Place in a serving dish and garnish with vegan permesan. Serve immediately.
