Cooking Steps

  • In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they begin to soften.
  • Once the veggies are softened, add the minced garlic and cook for another minute.
  • Pour in the vegetable broth and the can of diced tomatoes. Bring the mixture to a gentle boil, then stir in the orzo.
  • Reduce the heat and let the soup simmer for about 10-12 minutes, or until the orzo is cooked al dente.
  • Taste and add salt and pepper as needed. Serve hot, garnished with fresh herbs if desired.

Notes

For added sustenance, stir in cooked chicken, turkey, or beans. You can also include red pepper flakes for a spicy kick or a splash of cream for a creamy twist. Prepping ahead by chopping veggies in advance can save you time. Leftovers can be used as a sauce over grains or pasta.
