  • 1 cup Cheddar Cheese Sharp or mild, freshly grated for best melting
  • 4 oz Cream Cheese

Sauce Base

  • 2 cups Whole Milk For a luscious sauce
  • 2 tbsp Butter Essential for flavor and richness
  • 2 tbsp Flour To thicken the cheese sauce
  • 1 tbsp Nutritional Yeast Optional, adds a cheesy flavor without dairy

Preparation

  • Begin by boiling a large pot of salted water.
  • Add the elbow macaroni and cook according to the package instructions until al dente.

Making the Cheese Sauce

  • While the pasta cooks, melt the butter in a saucepan over medium heat.
  • Add the flour and whisk for about 2-3 minutes until golden brown, creating a roux.
  • Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5-7 minutes.
  • Once the sauce is thick and bubbling, lower the heat and add in the cheddar cheese and cream cheese. Stir until completely melted and creamy.

Combining

  • Drain the macaroni and add it directly to the cheese sauce, mixing well to ensure every noodle is covered.

Serving

  • Transfer to serving dishes and enjoy while it’s hot!
