  • 1 cup mixed vegetables Try peas, carrots, and corn.
  • 1 can cream of chicken soup Feel free to substitute with homemade.
  • 1 can refrigerated biscuit dough For a healthier option, try a whole grain version.

Seasonings

  • salt
  • pepper
  • herbs like thyme or rosemary For added depth.

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the shredded chicken, mixed vegetables, and cream of chicken soup. Season with salt, pepper, and herbs to taste.
  • Pour the mixture into a greased baking dish, spreading it evenly across the bottom.
  • Open the can of biscuit dough and break apart the dough into individual pieces. Scatter them evenly over the chicken mixture.

Baking

  • Bake in the preheated oven for about 30 minutes, or until the biscuits are golden brown and the filling is bubbling around the edges.
  • Let it cool for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container for up to 3 days in the refrigerator. For a lighter version, use Greek yogurt instead of cream of chicken soup and cauliflower crust instead of biscuit dough.
