Preparation

  • Preheat your oven to 425°F (220°C).
  • Pat the chicken thighs dry with paper towels to ensure crispy skin.
  • Season both sides generously with salt, pepper, garlic powder, and paprika.
  • Heat olive oil in a cast iron skillet over medium-high heat.

Cooking

  • Once the oil is hot, place the chicken thighs skin-side down in the skillet. Let them cook for about 7-8 minutes until golden brown.
  • Flip the chicken thighs and transfer the skillet to the preheated oven. Bake for 20-25 minutes, until the internal temperature reaches 165°F (74°C).
  • Remove from the oven, let them rest for a few minutes, and dig in!

Notes

For a healthier option, consider using skinless thighs. Store leftovers in an airtight container in the refrigerator for up to 3 days. They can be frozen for longer storage. Reheat in the oven at 350°F (175°C) to restore the crispy texture.
