Vegetables

  • 4 cups Vegetable broth Use low-sodium for a healthier option.
  • 1 can Coconut milk Provides creamy texture without dairy.
  • 1 inch Ginger, grated For added warmth.

  • 2 tablespoons Olive oil For sautéing the vegetables.

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and grated ginger, allowing them to sauté for another minute until fragrant.
  • Add the chopped carrots to the pot, mixing well with the onions and garlic.
  • Pour the vegetable broth over the veggies and bring to a boil. Lower the heat and let it simmer for about 20 minutes until the carrots are soft.
  • Using an immersion blender, carefully blend the soup until smooth. If you don't have an immersion blender, transfer it in batches to a traditional blender.
  • Stir in the coconut milk and season with salt and pepper to taste. Heat through for an additional 2-3 minutes.

Notes

This soup is great for meal prep! Refrigerate for up to 4 days or freeze in bags for easy storage. Reheat on the stove over low heat, adding a splash of water if needed.
